Potato Frittata

Ingredients:
50 gr. butter
3 onions , sliced
3 -4 medium sized potatoes
2 zucchini – sliced (or other vegetables)
4 eggs
2 tbs water
½ cup grated parmesan cheese

Method
Melt butter in large pan and cook onions until evenly brown.
Add sliced (unpeeled) potatoes, stir well, cover pan and cook 15- 20 minutes stirring occasionally.
After 10 minutes add zucchini or other vegetables so that they are cooked at the same time as the potatoes.
Beat eggs, water and half the cheese.
Pour over the pressed down vegetable mixture.
Cook gently for 10 minutes.
Sprinkle rest of the cheese over the top and brown under grill until top puffs up and browns lightly.
For a variation add garlic to potatoes or fresh herbs in the egg mix.
