Top chef to head Palliser Estate kitchen

May 2025

Palliser Estate has hired an executive chef who has headed luxury lodge kitchens at Wharekauhau, Kinloch and Mangapapa Hotel to lead its kitchen offering in Martinborough.

The Palliser kitchen will be headed by Norka Mella Munoz from early May _ fresh from being named Luxury Lodge Chef of the Year  by the Cuisine Good Food Guide 2024. Munoz was also key to Wharekauhau securing the lodge’s first-ever Cuisine Hat.

“I call myself a ‘Chiwi,’ having grown up in Chile, but spending half my life in New Zealand. And my food style mirrors these influences,” Munoz said in a statement.

Palliser chief executive Pip Goodwin said she’s delighted to have a Chef of such calibre lead Palliser Kitchen.

“After four different pop-up foodies operating out of the Palliser Kitchen … having our own Executive Chef in-house will  … create consistency for visitors to our Cellar Door and Kitchen.”

A special event is planned for later in May “to celebrate Norka’s arrival and the launch of her first winter menu at Palliser,” she added.
