Tomatoes, potato and salmon salad.

Ingredients

500gr small potatoes

300gr small green beans

½ cup peas

500gr tomatoes

1 small head of lettuce

250 gr smoked salmon

3 tbs olive oil

handful basil leaves.

Dressing

1 lemon zest and juice

1 tsp mustard

4 tbsp virgin olive oil

salt and pepper.

Method

Cut potatoes into 2cm cubes bring salted water to boil

them simmer them for 6 – 7 minutes until tender.

Boil water then simmer peas and beans for 2 minutes

then strain under cold running water to retain their colour.

Cut tomatoes into chunks

Break salmon into chunks

Heat oil in pan and add potatoes, tossing them as they brown

Serve

Place lettuce leaves on large platter

Toss tomatoes, bens, peas and salmon on top

Add hot potatoes

Shake dressing ingredients in jar to mix and drizzle over the top.

Garnish with Basil
