Green banana curry

Ingredients

4 green bananas

1 tbsp olive oil

1 onion finely sliced

3 tbsp curry paste

1 tsp tumeric

400 ml coconut milk

1 red capsicum  seeded and diced

100gr green beans  sliced into 3 cm pieces

1 garlic clove minced

1 tsp root ginger minced

salt and pepper

Method

Peel bananas with sharp knife and slice into 1 cm discs. Het oil in a large saucepan, add onions and fry over medium heat for about 5 minutes until soft. Add bananas, curry paste and turmeric and fry fro another minute until fragrant.

Pour in the coconut milk, add capsicum beans, garlic and ginger. Simmer  for 5 minutes.

Add salt and pepper to taste. Serve sprinkled with mint leaves.

Serves 4.
