Mussel fritters
Ingredients
350g  
frozen mussel meat, thawed and finely chopped
4  
eggs
2 cups 
wholemeal flour
1/2 cup 
fresh parsley, chopped
2  
spring onion, chopped
2/3 cup 
low fat milk
1/2 cup 
low fat, unsweetened yoghurt
2 tsp 
baking powder
2 tbsp 
canola oil

Method
Mix together gently; chopped mussels, eggs, flour, parsley, spring onion, milk, yoghurt and baking powder
Heat a large heavy based frying pan
Use a little oil at a time
Drop 2 tablespoons of batter onto pan for each fritter
Cook until golden brown on both sides and cooked through
