Roast stuffed mushrooms
Ingredients:
6 large mushrooms
2 tbsp butter
2 shaloots finely chopped
6 sprigs fresh thyme chopped
3 tbsp breadcrumbs
3 anchovies finely chopped
4 tbsp feta cheese crumbled
Parmesan cheese for grating
Parsley for garnish.
Method:
Pre heat oven to 120C. Wipe mushrooms clean and remove stalks. Chop the stalks finely
Heat butter in small frying pan and cook the mushroom stalks, shallots and thyme over a low heat until soft and golden.
Crumble in the breadcrumbs feta and anchovies and mix well. Add salt and pepper to taste.
Divide the mixture into equal portions and spread each over the upturned mushrooms. Grate cheese on top.
Place mushrooms on a pan and roast in oven for 20 minutes.
Sprinkle with chopped parsley to serve
