Fabulous Fish Pie
This is a great budget friendly fish dish that is easy to make and full of fresh flavours.
Ingredients
8 medium potatoes, peeled and diced
3 Tbsp trim milk
Tbsp canola oil
2 cups carrot, diced
3 cups leek, chopped
2 cups water
1 cup trim milk
3 Tbsp cornflour
1/2 cup parsley, chopped
2 Tbsp lemon juice
600g white fish fillets, diced
1/2 cup edam cheese, grated
Method
Heat oven to 180C
Mash potatoes with the first measure of milk
Heat oil in a large saucepan. Add carrot and leek and sauté at a medium heat until soft but not brown. Add water and milk and bring to a gentle simmer
Wet cornflour with a little water and gradually add to the simmering sauce until thick
Remove from heat. Mix in the parsley and lemon juice.
Pour into an oven proof dish. Lay diced fish on top of sauce
Spread mashed potato on top. Sprinkle cheese over potato
Bake for approximately 30 minutes or until hot through and the fish is cooked.
