Marinated Roasted Chicken Pieces

This chicken is great roasted but can also be cooked over a BBQ for added flavour and colour

Ingredients

2 Tbsp fresh sage, chopped
2 anchovy fillets, mashed
3 Tbsp lemon juice
1/2 tsp cracked pepper
2 cloves garlic, crushed
1 Tbsp lemon zest, finely chopped
Tbsp tomato paste
1/3 cup unsweetened low-fat yoghurt
1kg skinless chicken pieces on the bone

Method
 
Mix all of the ingredients except the chicken together
Rub this mixture over the chicken and place in a sealed container to marinate overnight
Heat oven to 225C
Place a wire rack over a roasting dish half filled with water
Place chicken with flesh-side up on rack
Roast chicken for 20 minutes
Reduce heat in oven to 175C
Continue to roast chicken for a further 45 minutes or until it is cooked through
Remove from oven and allow to rest for 10 minutes before serving
