Self crusting herb /mushroom quiche
Ingredients
2 medium onions
2 tbsp oil
200gr mushrooms
1 tbsp basil
1 tsp thyme
pepper to taste
2 eggs
½ cup sour cream
¾ cup milk
½ tsp salt
½ cup self raising flour
½ grated tasty cheese
Method
Slice onions finely sauté in the oil until soft
Add mushroom and cook until are soft
Remove from heat
Beat together eggs milk, cream and salt
Sprinkle flour over mixture and stir just enough to combine
Add cheese and stir enough to mix
Butter 25 -30 cm flan or pie dish
Tip in onion/mushroom mix and spread evenly
Pour batter evenly over this
Bake at 220 degrees for 20 -30 minutes until light brown and firm in centre.
Serves 4
Note: ½ tsp of dried basil and ¼ tsp of dried thyme may be used in place of fresh
