Sausage frittata
Ingredients
1 large potato diced
1 onion finely chopped
4 Scotty’s sausages cooked and sliced
¼ teaspoon dried tarragon
¼ cup water
8 eggs beaten
2 tbs milk
¼ cup grated cheese.
Method
Preheat oven to 180 c . Grease a 24x32cm slice pan (or line with baking paper).
Heat oil in frying pan, add potato, onion, sausage, tarragon, ½ the water.
Cover and cook over medium heat for 10 minutes and potato has softened.
Beat eggs , milk and remaining water and pour into the prepared dish .
Bake in oven for 10 minutes.
Sprinkle cheese and bake for a further 10 minutes until puffed and golden.
Serve with greens.
