Irish Stew
It appears that there is now a generation who
do not know how to go about making a good
old nourishing and economical Irish stew.
Ingredients
1 small (or half large) cabbage chopped.
800 gr. Mutton with fat trimmed (see Scotty).
2 onions finely chopped
2 cloves garlic finely chopped
400 gr. Potatoes sliced.
1 leek sliced.
2 carrots sliced.
1 litre beef stock
1 bay leaf, parsley, caraway seed, salt, pepper.
Method
Heat oven to 180 degrees.


Place layer of cabbage on bottom of pot.
Add layer of mutton onions and garlic.
Season with salt, pepper and pinch of caraway.
Add layer of potatoes, carrots, leeks and seasoning.
Continue layering until all ingredients are in pot.
Put bay leaf and parsley to top and add stock.
Cover and transfer to bottom of oven and cook
for 1½ hours.
Remove lid and cook for further 30 minutes.
Serves 4.
