Sausage meatballs
Ingredients
500gr Scotty’s sausages
2 tbsp garlic oil
4 fat spring onions finely spiced 1 tsp dried oregano
60 ml white wine
2 cans chopped tomatoes
2 bay leaves
Method


Squeeze the meat from the sausages and shape into small meatballs.
Heat oil in large pan and fry meatballs until golden. Add spring onions, and oregano , stir gently.
Add white wine and tomatoes fill one of the cans with water and add.
Add bay leaves and bring to fast simmer. Leave to cook until the mix has thickened slightly and the meatballs are cooked through (aprox 15 minutes)
Sprinkle with parsley and serve with pasta or mashed potatoes.
