Carrot and mushroom loaf
Ingredients
1 medium onion
1 clove garlic
200gr mushrooms
400gr grated carrots
½ dry cup breadcrumbs
½ cup grated cheese


½ cup milk
2 eggs
1 tsp basil
¼ tsp thyme
½ tsp salt
black pepper to taste.
For finishing
2 tbsp dry breadcrumbs
2 tbsp grated cheese
Paprika for dusting
Method
Finely chop onion and garlic and cook in oil until soft.
Add sliced mushrooms and continue cooking until they are soft.
Transfer to mixing bowl and add rest of the ingredients and mix well.
Pour into well greased loaf tin.
Sprinkle bread crumbs, cheese and paprika on top.
Cover with foil and cook at 180 degrees for 30 minutes or until centre is firm when pressed.
